Recipe for dinner Like the video, subscribe, and share. season the fish with Salt, Pepper, Garlic Compound butter: 1 shallot 4 cloves garlic 1 cup parsley leaves (stems removed) 2 tsp fresh thyme 1 tsp kosher salt 8 oz. unsalted butter (softened) 4 tbsp extra virgin olive oil zest and juice of half a lemon place items in a food processor in the order listed and pulse until each ingredient is chopped before adding the next ingredient. THE BUTTER SHOULD BE SOFT BEFORE ADDING. once it is all mixed, then form it. place wax paper or plastic wrap on counter, and spoon the mixture out of the chopper, and onto the middle of your paper, or plastic wrap. Then begin to roll it into a shape of a sausage. refrigerate for 2 hours before using. store in refrigerator for up to 10 days, freeze for up to 6 months. Often referred to as "the Wagyu of salmon," Copper River king salmon can reach $120 per pound. Sought after by chefs for its rich, buttery flavor, this salmon is not easy to come by. To reach its final destination in Alaska's Copper River, it has to swim 300 miles between glaciers. It's a tiring journey in which the fish builds up its strength and muscle. The cold waters of the Copper River are challenging for fishers too, who set sail with no guarantee they will catch any fish at all. So is Copper River king salmon worth the challenge? Healthy Delicious Salmon Bowl! 594 calories per serving with 42g of protein / 48g carbs / 26g fat One of my favourite ways of eating salmon, packed with flavour, so filling, easy to make and perfect for a quick healthy lunch or dinner🔥 For the salmon: • 350-400g raw skinless salmon (cut into cubes for 2 servings) • 1 tbsp garlic (fresh or powder) • 1 tsp chilli flakes • 1 tsp paprika • 1 tbsp light & dark soy sauce • 15-20g honey • 1/2 lemon juice Mix till each piece is well coated Cook salmon on medium-low heat for 2-3 mins each side till golden brown Cucumber salad: • 1/2 cucumber cut into slices • 1-2 tbsp light soy sauce • 1/2 tsp garlic • 1/2 tsp chilli flakes or paprika (depends if you want it spicy) • 1 tsp rice vinegar of lemon juice Serve with: • 100g cooked jasmine rice per serving(200g for 2 servings) • Cucumber salad • Sliced carrot • Sliced red onion • 50g avocado per serving (100g for 2 servings) • Spicy lemon mayo (light mayo, sriracha & lemon juice) • Garnish with green onion and sesame seeds This recipe makes 2 servings Macros per serving Approx 594 calories | 42g protein | 48g carbs | 26g fat ENJOY!

Shopping List: 2 5-6 oz salmon filets (Skin on or off based on your preference) salt, pepper, garlic, onion powder, chili powder, cajun seasoning 1/2 lemon thyme 2-3 tbsp butter avocado oil Sauce: 3 tbsp butter 1-2 tbsp flour 1 tbsp lobster base 1 tbsp garlic paste 2/3 cup low/no sodium chicken stock (more if needed to thin the sauce) 1/4 cup heavy cream 1/2 - 1 cup of parmesan cheese (Cheese will thicken the sauce a bit as well) cajun seasoning (to taste) Directions: Preheat oven to 400 degrees. Season salmon on both sides. Heat skillet and add high smoke point cooking oil. Add 1/2 lemon face down in the skillet (as seen in the video) - this is to add some flavor to the skillet and also for presentation. Sear Salmon 60-90 seconds per side or until you achieve the color you're looking for. Baste with butter and thyme and finish in the oven for 8-10 mins or until the salmon reaches 135 internal temp. Prepare the sauce by melting butter and adding lobster base, minced garlic, flour to your pot. Next whisk in chicken stock and heavy cream. Bring to a boil and reduce to a simmer. Remove from heat and mix in cheese - whisking to ensure sauce is smooth. Do not add seasoning until AFTER you've added the parmesan cheese. The lobster base and parmesan cheese contain sodium, so you may not need much additional salt. Always Season to taste. Serve with pasta, potatoes, and/or veggies.

Today in Home Movies we are showing salmon some respect and cooking it gently… low and slow and covered in olive oil. We are making what can only be described as "A Really Nice Fish." A Really Nice Fish is any fatty fish (salmon, arctic char, steelhead trout) seasoned with salt and pepper and some sliced lemon, and cooked for a short 12 to 15 minutes in a sea (from one sea to another for this fish!) of olive oil. The olive oil protects the fish from being overcooked and the result is… perfection (yes, you can and should reuse the olive oil - it won't smell or taste fishy, promise). Of course, A Really Nice Fish needs… a really nice salad. Growing, up my dad made salmon on the grill and 90% of the time, the skin was burnt to a crisp. I began thinking the skin was meant to be thrown away, its only use as a barrier to protect the delicate flesh. But every once in a while he would get it right and combined with the fatty belly meat, it became one of my favorite bites of seafood. When cooked in a pan there’s a couple things I think about to get the perfect salmon skin. Avoid seasoning the skin with anything other than salt, things like garlic powder burn and stick.
